José from Abu Estate is known for his complex, intense coffees that have already inspired other World Champions. I was captivated by the combination of intensity and insane complexity of the fruit. Upon arrival of the green coffee (10 days after completion), I divided the lot into three equal contingents and froze them at different times. This creates entirely new possibilities to taste the \"freshness\". The differences are astonishing. In my opinion, with the option \u003cstrong\u003e\u003cem\u003e\"frozen upon arrival\"\u003c\/em\u003e\u003c\/strong\u003e, one could win a filter coffee championship. The coffee plantations are located on the slopes of the Barú Volcano National Park on fertile, deep volcanic soils, rich in organic matter and with excellent drainage, thus minimizing erosion.\u003c\/p\u003e\n\u003cp\u003eThe average altitude is 1550 meters above sea level. Shade is provided by native trees that grow in harmony with the lush local flora and fauna, protecting the environment and biodiversity. Due to its strategically favorable geographical location, sunlight is a key element throughout the process.
