Intensity and Complexity
For this year's German Barista Championship, I was fortunate enough to source a truly exceptional coffee. José from Abu Estate is known for his complex, intense coffees that have already inspired other World Champions. I was captivated by the combination of intensity and insane complexity of the fruit. Upon arrival of the green coffee (10 days after completion), I divided the lot into three equal contingents and froze them at different times. This creates entirely new possibilities to taste the "freshness". The differences are astonishing. In my opinion, with the option "frozen upon arrival", one could win a filter coffee championship. The option "frozen 16 weeks after arrival" convinced the judges in the preliminary round of this year's championship. -> To the Scoresheets

Farm and Region
This Gesha is grown in the Cañas Verdes region in Boquete, in a humid and rainy microclimate typical of tropical forests. The coffee plantations are located on the slopes of the Barú Volcano National Park on fertile, deep volcanic soils, rich in organic matter and with excellent drainage, thus minimizing erosion.
The average altitude is 1550 meters above sea level. Shade is provided by native trees that grow in harmony with the lush local flora and fauna, protecting the environment and biodiversity. Due to its strategically favorable geographical location, sunlight is a key element throughout the process. The plantation receives strong sunlight, which is interrupted in the mornings and evenings by a gentle tropical mist, known as Bajareque, and enveloped by dense fog.
This allows the cherries to develop their full potential, intensifying the sugar content and optimally developing the coffee's complexity in the cup.
The pristine forests where ABU COFFEE farm is located offer, through their climate, exceptional conditions for achieving a unique combination of characteristics that make this Gesha an unmistakable coffee.
Process and Drying
The cherries are hand-picked at optimal ripeness, then hand-sorted and soaked in mountain spring water. The whole cherries first undergo 72 hours of sun drying, followed by 96 hours of anaerobic drying in sealed Grainpro bags submerged in spring water. After fermentation is complete, the cherries are manually placed on raised beds, where they are sun-dried for 25 days, 4 hours per day.
