Another coffee from Jairo Arcila enriches our lineup! Completely opposite in terms of aromas and flavor profile to the Santa Monica Pink Bourbon, this coffee offers beautiful tropical notes of pineapple and honey paired with lovely floral lavender notes. These are created by the special EF2 process. This coffee can be used to create wonderful beverages, both as an exceptional espresso and a clear and brilliant filter coffee. In combination with milk, it produces very balanced and smooth drinks.

 

About the variety: This unique variety is a natural mutation that originated in the small town of San Adolfo in the Huila region of Colombia.

Known for its exceptional flavor profile and robust growing characteristics, Papayo has quickly become a standout variety in the world of specialty coffee. The story of Papayo begins in the fertile coffee-growing regions of San Adolfo in Huila, a region known for some of Colombia's best coffees. The variety emerged as a natural mutation, a gift from nature that caught the attention of local farmers.

Its elongated beans, reminiscent of the shape of a papaya, gave it its name. This distinctive appearance is reminiscent of the Pacamara variety, but Papayo is characterized by its unparalleled sweetness and floral complexity, often compared to the famous Gesha. It combines the best of two worlds: exceptional agronomic properties and an outstanding flavor profile. The trees are compact, making them easy to cultivate and harvest. They are also very resistant to common challenges such as coffee rust and drought, which are crucial for sustainable coffee cultivation in the face of climate change. Furthermore, Papayo is characterized by high yields, allowing farmers to benefit economically while producing a premium product. Its elongated shape and unique flavor potential make it equally popular with coffee producers and roasters.
